Any cooks on this damn thing?
I've recently rediscovered my talents for Creole cuisine and its preparation, and I was wondering if any of y'all are good cooks? I've prepared shrimp etouffee twice in the past couple of weeks and got good reviews. I feel like I'm finally starting to get my roux recipe back to where it was when I was in the Army(7 long years ago), but I'm catching right back up quick! Mine is a family recipe(the roux and the etouffee), so it's a little different from what they do at Papadeaux or whatever huckster "Cajun kitchen" I've wandered into from time to time. I do have to say however that Razoo's in Dallas gets the closest nod for etouffee out of any place I've visited. So, cooks? I was thinking one of these days some of us FunFunFunites could stage a get together or something involving whatever monstrosities we can manage......
